I set my goal to practice yoga twice per week, to start. First thing on Wednesdays and Saturdays, my daughter and I do yoga together.
We’ve done it the past two weeks, without fail. =)
O.k…. I forgot to blog, but I did make my goal!
The second week, I tried Polenta. I made Polenta Crisps topped with Pesto and fresh tomato. The recipe called for topping it with additional pine nuts, which I tried, but it seemed to heavy, so I decided to add some fresh tomato, which was nice and fresh – a perfect spring-timey appetizer.
The third week I tried making a tenderloin. Yeah, I’ve had pork tenderloin before… but this one was different. I marinated it in a mix of cola, hoison sauce, o.j. and some other things overnight. Then I had to slice it open and stuff it with thinly sliced onions, apple slices, dried cranberries soaked in white wine, and minced garlic. Then, it was slow cooked all wrapped up with a maple mustard glaze. It was better than good – it was incredible.
And this week… I made tequila marinated chicken. It was spicy, limey, and soooo good. =) I served it with dirty rice and a huge salad.
All of my CDs, Computer programs, etc. are now back in their very own case, and neatly arranged on the shelf. I found my copy of MS Office, which was a good thing, because I needed to “repair” my installation. =)
