Almost at the 6 month mark

and still going strong. There’s been a few days here and there that I’ve not taken a photograph on that particular day, but on whole, I’m managing quite fine!



Get back to Target Weight
Nearly there

On the 8th June 2012, it was exactly 3 years since I lost over 50 pounds. I’m now 13 pounds away from target. Not quite back where I should be but at least I’ve shifted the weight from holidays and christmas last year!



To find the perfect banana bread recipe
Things are looking good

So far this is the clear winner from Kitchenconfidante:

1 cup buttermilk (or substitute 1 cup milk with juice of one lemon)
3 cups flour
½ tsp salt
1½ tsp baking powder
1½ tsp baking soda
½ cup chopped pecans (optional)
2 cups sugar
½ cup unsalted butter
2 eggs
5 – 6 very ripe bananas

Preheat oven to 300 degrees. Prepare two loaf pans by buttering and lining with parchment paper.

Sift or whisk flour, salt, baking powder and baking soda. Add pecans if using, then set aside. In a separate bowl, cream sugar and butter. Mix in eggs, one at a time, then add the bananas. Add dry ingredients and buttermilk, alternating until incorporated. Try to end with the dry ingredient addition, and be sure not to over mix.

Bake in buttered loaf pans for one hour or until toothpick comes out clean.

January 9th

So far so good, 9 photographs have been taken. I might not be winning any awards with my photography skills but still, at least you can make out what the subjects are!



To try out recipes from the cookbooks I own, rather than buy new ones.
Not quite from a cookbook..

I took the time to organise my favourite recipes that I’d book marked over the last year on the internet and picked out a few that I thought I could tackle one weekend.

Ginger, orange and cinnamon vegan frech toast. It sounds like it would be a taste sensation but the reality was a soggy piece of warm bread with a bitter orange after taste. This book mark was soon deleted. But at least I tried.

Next, sweet potato and avocado inside out sushi with a maple and soy sauce reduction. My first attempt at the inside out malarky proved to be fairly successul however I am glad I cup back on the reduction ingredients. There was far too much!

All in all, a a good effort for the first weekend of the year!



Learn to cook beetroot
I made Beetroot, lemon and chive soup

I followed a lovely recipe with high expectations only to be thoroughly disappointed. Perhaps using precooked beetroot wasn’t the best idea?

I wont give up though – there must be other ways to cook the stuff!
