I'm on a roll!

On New Year’s I made a fancy fruit tart which turned out beautifully… I was so proud of myself for that one!
Lately, in an effort to get healthy, I’ve been making a new recipe nearly every night.
Sunday: Chinese style hotpot with fish stock, mung bean threads, mushrooms, kelp, spring onions and tofu – good but very different flavors than I usually work with.
Monday: Pasta with a roasted red-pepper sauce – delicious!
Tuesday: Soup of quinoa, black and kidney beans, and kale – very healthy, pretty good but needs more seasonings.
Today: I’m planning roasted potatoes and kale, with sausage on the side… hope it will be good!

1 book down
Read Michael’s Pollan’s “In Defense of Food” over break. Am about 3/4 through “Children of Hurin” by JRR Tolkien. I’ve discovered I can read and knit at the same time if the pattern is repetitive (although when I do both together I do neither quickly) and that’s given me incentive… reading time is no longer time I’m not knitting! I think I’m going to try and alternate a fiction book and a non-fiction book. Next up… Fever Trail, about the search for the quinine tree. Also, my husband is reading “Stiff” by Mary Roach to me, so while it doesn’t techinically count as reading its still a step up from TV

3 panels done

I just have 1 more of panel A to do, then I can start on the B panels… I’m getting faster. I just hope I don’t run out of yarn! 30 skiens sounds like a lot but it goes fast.
