I have been thinking about this for awhile and the more and more I read about it (just from various internet articles and forums), the more I like the sound of it. I think this goal will be easier to begin to pursue as the weather gets a little warmer so I’m going to more seriously start going raw when the farmer’s market opens in April (I mean it will be hard NOT to with all those fresh vegetables…YUMMMM)! I’m going to slowly start transitioning until then. I will make breakfast and lunch be 100% raw. Breakfast: mostly green smoothies (I have those a lot now anyway so that should be no problem) and I’m not really a big lunch eater but when I do eat lunch I’ll have it be mostly fresh fruit. As far as dinner…right now I usually have brown rice with steamed veggies which, if you think about that being my really only regular non-raw meal, is pretty good but of course I have other indulgences that aren’t raw :P So anyway I’m going to start making my own almond milk instead of buying soymilk, and I’m going to experiment with soaking different nuts and seeds. Once I’m done with the rice I have (I mean I’m not going to waste food here people), I’m going to start going for quinoa and wild rice which are more easily digestible and I guess closer to raw? And I’m going to start NOT steaming my veggies to go along with those (I just bought a bunch of frozen veggies so that’s why I’m steaming them). I’m not going to say my goal is 100% raw right now, that’s not completely realistic with my life at the moment. But I am going to aim for 80-90%. I have found that cauliflower has an amazing rice-like texture when you chop it up so that will be a good transition, and I am a fricking trail-mix junkie (I mean, really, my roommates make fun of me because that’s what I consider my “junk food”) so I think I can make this work. Anyway I’m just trying to find a healthier lifestyle for myself, lose a little weight, and just feel and be the best I can! So I will continue my research and build myself up until that opening day of the farmer’s market in April when I will give myself the final push to be as raw as I absolutely can :)

So it’s not happening this summer…or next. I’m thinking I might switch up my plans though…depending on what happens after I graduate, I think it would be amazing to go for an even longer volunteer trip…say a year. I need to go back so badly though, I hope I can someday!!!
