I tried 2 new recipes this week.
Sunday, I made baked eggplant with barbeque sauce, mashed potatoes, and roasted brussel sprouts and cherry tomatoes. I got the idea for the eggplant from the Korean Barbeque Eggplant recipe at Fatfree Vegan. The eggplant turned out pretty good, but next time I will follow the original recipe more closely. The mashed potatoes were great. I have been craving mashed potatoes, and these hit the spot. All in all, it was a very good meal.
Monday, I made a modified version of Thai eggplant and chick peas with peanut marsala from the same Fatfree Vegan website mentioned above. I thought it was ok, but my bf loved it and wants me to make more soon. I served it with roasted brussel sprouts and cherry tomatoes, which is pretty much my favorite thing to eat these days. .

Ok, so this isn’t a recipe, but it is new vegan food, so I feel compelled to share. Whole Soy & Co makes soy yogurt, and it is available in multiple flavors. I am snacking on the strawberry now. I am spoiled, and I feel deprived if I don’t get dessert most nights, so I have replaced cookies/ veg ice cream, etc with yogurt. I think it is a good substitute – it is sweet, has less fat than other desserts, and is packed with live active cultures, which Dannon commercials insist are important.

lentil soup

I made the lentil soup for picky kids in the back of How It All Vegan. It is tasty! I think it is funny that my favorite recipes are for picky kids, when I am trying to be a not-so-picky adult. Not picky for a vegan, that is. Anyway, I basically sauteed diced onion and garlic in a little bit of oil and cooked until soft. Then I added diced carrots, celery, and mushrooms, and cooked until soft. Next, I added lentils, veggie broth, tomato sauce, bay leaves, Braggs, and pepper. The lentils kept absorbing the liquid, so I added water as necessary until the lentils were soft. This soup is delicious, and not too much work for nights like tonight when I don’t feel like cooking.
If anyone is looking for good vegan recipes, I could not have made it through my first year without How It All Vegan, How It All Vegan Again, and the Garden of Vegan. Also, the blog Fatfree Vegan has really good recipes (the site even has good kid-friendly recipes).
