Roasting root vegetables…carrots, brussel sprouts, potatoes…with generous amount of olive oil rubbed on veggies and some rosemary and jane’s crazy salt sprinkled about…will sprinkle with a little balsalmic vinegar when done…400 degrees for 40 minutes…yum…number 8 of 10 new dishes! Actually…I ended up drizzling a little soy vay on top of the veggies after cooking as I didn’t have balsalmic vinegar…sooooo gooood!!

How I did it: Went to Beijing, Xi'an, Shanghai. Very strange land in some ways...lots of smog, lots of people. People were VERY kind...genuinely kind. Food...not so good to me. How I did it: Stayed at the Chautauqua Institute in a fabulous inn...you pay a gate fee to get into the Institute and there are lecturers from all over the world speaking on interesting topics. I just made beef short ribs for the first time…had a great recipe but the ribs didn’t have a lot of taste even after almost 3 hours of cooking…I didn’t put as much wine in as the recipe asked for and a few less herbs so that may be the reason…but…the meat was so tender it fell off the bone…I believe this is number seven of 10 new dishes
So this one I made up…I made these great pumpkin cupcakes and had 15 oz. of pumpkin left over so I put it in a pot, added chicken broth (one medium sized box), added kale, added chopped apples, 1/4 to 1/2 teaspoon cumin, 1 tablespoon brown sugar and brought to a boil. Simmered for 5 to 10 minutes. Put in a bowl and topped with about 2 teaspoons of crumbled blue cheese. Yum!!
