So this one I made up…I made these great pumpkin cupcakes and had 15 oz. of pumpkin left over so I put it in a pot, added chicken broth (one medium sized box), added kale, added chopped apples, 1/4 to 1/2 teaspoon cumin, 1 tablespoon brown sugar and brought to a boil. Simmered for 5 to 10 minutes. Put in a bowl and topped with about 2 teaspoons of crumbled blue cheese. Yum!!

How I did it: Went to Beijing, Xi'an, Shanghai. Very strange land in some ways...lots of smog, lots of people. People were VERY kind...genuinely kind. Food...not so good to me. So I made 4 new dishes last night…jewel watermelon soup, grilled romaine, vegan potato and green bean salad, and tofu and soy vay. My guests loved it…fab!! I grilled the romaine on the george forman grill for about 4 minutes—2 minutes each side of a romaine head sliced lengthwise in half. I put ginger dressing like you get in the Japanese restaurants on it…yum! Five recipes to go!
