Corned Beef turned out well. I can definitely do that again. It was pretty easy; I just boiled it. Tonight, meatballs in a mushroom (tomato) sauce with spaghetti. I’ve done the meatballs and sauce twice before; it turned out pretty well both times. But I wanted to practice on the sauce a little more, so I did it again tonight. Smells good; be ready in about a half hour.



finish school
It's about time... 2 years ago

Time and money, mostly. I took a few years off after high school to find out what I wanted to do with myself. It doesn’t make sense to go to college, only to find out that what you really want to do is lay bricks. Well, it turned out I didn’t want to lay bricks, or anything remotely close to that. What I want to do is teach. About six years ago I took a job as a teacher’s assistant in a middle school class. I knew right away that it was what I wanted to do.
That was, like I said, six years ago. I’m 27 now, going to school part time at night, working at the high school now during the day. Living at home. I feel like I should be farther along in life that this by now. And although I have completed 2 years of school and haven’t had to take out a loan yet, I feel like I’m behind.
Plus, I have all this experience in the classroom. I’m a really good teacher. But they can only pay me so much, and it’s not enough to support myself.
So, I’ve decided to take a leave from my job and go to school full time. It’ll take at least a year, and probably two.

A friend of mine recently went vegetarian, so I made her vegetable lo-mein and egg rolls. I spent all afternoon in the kitchen. The lo-mein came out pretty good. Not great, but pretty good. The egg rolls were fantastic, and pretty easy.

Today: corned beef dinner.
