i call it, Sage-Roast Stuffed Pork Chops
take 2 thick pork chops—thick enough to stuff. do the best you can to cut slits in the middle, creating pockets for stuffing.
for the stuffing, use some corn (canned is fine), salt, pepper, and sliced sun-dried tomatoes. mix them up well, then stuff each chop with them.
now to season the outer chops. chop sage and garlic, mix them with salt and some chili powder. coat the chops, both sides. let them sit in the fridge for a couple hours.
with an hour before mealtime, preheat your oven to 350 degrees. heat a pan with oil on high. sear both sides of each chop, don’t worry about the insides. just get a good brown on the outside. now stick them onto a glass oven dish and bake them for about half an hour. i did it for longer to make sure it cooked all the way through, but it came out a little dry because it cooked too long. i think thirty minutes should suffice.
i served it to my partner with brown rice and a pinto bean saute. i was happy with this meal. i thought i’d only eat half, since it was thick and stuffed. i ate it all. it was that good.
