This was REALLY yummy and super easy. I basically just sauteed onions & garlic in olive oil, then added fresh broccoli, red peppers, and kale to the mix to cook them down a little.
Meanwhile, I scrambled about 3 eggs and 3 egg whites, shredded cheese, added a little milk, salt, & pepper, then added the veggie mix. Poured the mix into a casserole dish and cooked it at 350 for about 30 mins.
It came out golden brown and scrumptious.
