How I did it: Not so easy. Most places in Mexico you like a place, you´ve got the money, you´re in. Not here in DF. There´s an application process more like there would be in the US. Read how I did it…

How I did it: Make the carnitas. One kilo of pork shoulder cut up into 2 inch or so pieces. Cover with water and add generous salt. Boil until water evaporates. Then brown in lard.Make chileajo sauce. Boil 9 tomatillos and one roma tomato until soft. Boil 6 guijillo chiles and 2 dried chile anchos until they are soft and rehydrated. Well, I’ve completed a full week of this, seven consecutive whole days. It’s not totally changed my life or anything but it is relaxing each time I do it, and something I want to continue for sure. Hopefully I will still be yawning months from now but this is a start.
