How I did it: Pulverize some cookies into crumbs (I used normal tea cookies). Add an equal amount of peanut butter and mix. The consistency should be like cookie dough.Melt a ton of chocolate (I used a mix of milk and semi-sweet). With a clean paintbrush, paint the bottoms and sides of 50 miniature paper muffin cups. It wasn’t the fanciest menu, but it was so fun to break bread with my friends.
I’ve lived in East Asia on and off for five years. I know it’s normal to crave foods from home, especially during holidays or after a bad day. But man, expats will gush and gush about peanut butter cups! When someone scoops up a package on a trip, it’s like striking gold.
I’ve seen recipes online that say it’s easy to make PB cups from scratch. I want to give it a try so that for Christmas, my expat friends and I have a taste of home.
I’ve been baking since I was a kid with my mother and grandmothers. Cookies are a favourite, and I’ve been trying to do more complicated stuff, especially around the holidays.
I make a mean shortbread, classic chocolate chip, etc, but I want a signature cookie that my friends and family can look forward to.
