Quinoa! 5 months ago

I’m eating Quinoa right now. I tend to forget about it for weeks at a time… even months. It’s so healthy though, with all the protein and fiber in it. I usually prepare 1 cup and eat half of it. I think 1/2 cup dry has about 12-14 grams of protein and 22 grams of fiber or something like that. woo.

Working all summer... 5 months ago

for an outdoorsy camp in Colorado!! I’l be there 6 weeks, and there’s usually 1 overnight a week, so 6 camp overnights. Plus at least one overnight with my boyfriend when he comes to visit :) Maybe even a few more with my friends and possibly family throughout the summer, as I get Friday-Sunday off each week!

I now have:
~some new camping/outdoors clothes (including Mountain Hardware Gortex rain jacket)
~a sleeping pad that DOESN’T have a hole in it
~a small foldable chair (much smaller than traditional camping chairs.. it’s the Monarch Chair by Alite)
~a new BPA-free Nalgene and silicone Splash Guard
~my own headlamp

So yeah I’m pretty excited to camp this summer and just be outdoors in general!
