I actually have made this goal this week! I walked Tuesday afternoon (short walk, but still), walked across the skybridge (about 1/2 mile) at work both Wednesday and Thursday mornings, and did the elliptical both Wednesday and Thursday evenings. Go me!

Not doing so good on this goal of 1 new recipe per week, but I did try something new last night that turned out really well!
8 boneless, skinless chicken thighs (breasts or breast tenders might work better for this, since it was a bit greasy)
Brussels sprouts
olive oil
Italian seasoning
minced garlic
salt
pepper
Cut the Brussels sprouts in half and arrange, along with the chicken pieces, in a large baking dish (I used a jelly roll pan and it was the perfect size). Drizzle with olive oil and sprinkle with seasonings and garlic. Bake at 375 °F for about an hour, sirring occasionally, until the sprouts are soft.
Well, last week was thrown off, as I had to go out of town for a funeral, but, without even really thinking about it, I did try a new recipe this week, Paula Deen’s Pumpkin Gingerbread Trifle, which I saw her prepare on her show a couple of weeks ago. Haven’t officially tried it yet, but it’s sitting in my fridge waiting for later.
