i only did this once and i burned the almonds, but still it was very tasty. first, chicken breast is cooked and then soaked in a small amount of unfiltered apple juice. soaking the chicken in apple juice totally made the meal. while the chicken is soaking, quickly heat up some oil and sliced shallots, then add like a cup of apple juice, some brown sugar, cinnamon and salt. then basically, take a bunch of spinach leaves, some chopped apples, mix it in with the chicken, and pour the hot apple-shallot mixture over it and top with slivered almonds (you can bake the almonds, or not, i don’t think it much matters).
i got this recipe from “you: the owners manual”, so it’s healthy too. and it tastes damn good. the soaking things in apple juice seems to be a “you” staple, there’s also a rather excellent and simple dessert on the realage website that basically requires chopping an apple, cooking it in apple juice and apple butter, mixing it with frozen yogurt (i prefer caramel, for a caramel apple concept), and then sprinkling with nuts. i wonder if it would be overkill to serve that with the apple/chicken/spinach thing. it may be a good excuse to buy unfiltered apple juice.
okay, that’s one recipe down. i can also make quiche, which is not so healthy, but taste, and a pretty awesome greek salad. so i’ll count that as another recipe. 2 down, 8 to go.
well, it only took me two years to learn two decent recipes, so i’m sure i’ll accomplish all this in the next decade or so ;)
here’s what i’m really looking for:
-an awesome stir fry (tofu or chicken)
-killer pasta recipe (would prefer healthy)
-something involving salmon that’s easy to make
any suggestions?
