My first attempt at baking croissants was pretty disastrous. I followed the recipe in The Joy of Cooking, and had to throw away my dough (and 3 sticks of butter!) in the trash. It was beyond saving. I think what went wrong is that I did not prepare each step properly before beginning. I had to work on a time limit (so that the butter wouldn’t melt…) and was looking for things in my kitchen instead of moving on to the next step.
Every week I want to make an attempt at baking croissants. I found a very helpful set of directions in Julia Child’s second volume of The Art of French Cooking. I may also stop into Williams and Sonoma and talk with one of the women who teaches classes there.
Hopefully week 2 will be greatly improved!
