After taking quite some time off, I am returning to school in the fall and will graduate in December. Better late than never, right? Very excited.

Finally going to do it!!

Day 4
I’m on day 4 without any meat and it has been fairly easy. It took me forever to go grocery shopping on Sunday because I actually had to read labels and think about meal combinations more than before. I am definitely facing one major challenge: I am a graduate student (read: dirt poor & crazy busy) and the frozen meatless entrees like Morningstar Farms are reeeaally expensive. Does anyone have any ideas/suggestions for inexpensive and quick vegetarian meals?
Where to start?

Does anyone know of any good books/blogs that talk about how to go about doing this?
