It hasn’t been an easy road, but the learning has been fantastic. With the current economy the program I entered has dissolved beneath my feet. But I am ALMOST done. I am taking the capstone this semester, and I will have just one elective class next fall prior to graduating with my degree!

How I did it: It was really a matter of just putting myself out there and doing it. I was afraid that I didn't know enough, wouldn't be good enough, or that because I couldn't committ to every week that they wouldn't want me. I've been helping in a Kindergarten classroom and its been a blessing for everyone involved. I've found that being honest and open about my schedule and what I can commit has helped. There were some complications and both eyes were done at different times, but it was SO worth it. My left eye is still in the healing process. A also ended up having ASA laser surgery instead of LASIK which I am happier with.
The things that I make are the things that I know how to make. I have a recipe book full of great food, and I am sure I could make great food. If I use a new recipe just once a week, that should hopefully expand my cooking abilities.
At least it sounds nice and logical.
