I have a five gallon carboy full of lychee wine, ready to be racked so it can sit another few months and clear up. I bought like 20-25 pounds of lychees the end of June, seeded and shelled them, and started the fermenting process, transferring it about a week later. Dear God I hope it’s not turning into vinegar!
