make my own cheese
First step, cream cheese, a half success! 2 months ago

My first goal is to get good soft cheeses going. The main goal, of course, is to make my very own hard cheeses.

FIRST EPIPHANY: JUST DO!
As is with most people in my generation, I just didn’t do ANYTHING because I wanted to make it perfect. All or nothing. Seeing that this is not very productive, I chose to just try things out, some of the attempts weren’t bad at all.

Yesterday was probably a breakthrough, I will check on my soft cheese after writing this here!

WHAT I DID:
I heat up a litre of fresh organic milk. After being careful not to burn and and keep it just under the boil, I add the juice of a lemon. Under heat and stirring, I notice there are two parts seperating in the pot, one of them is my highly sought after whey.

This I pour, after a while of the dairy still being on the heat, into some cloth I purchased. I make a bag of this and create a makeshift drainage system (will post a pic later) and refrigerate.

RESULT:
I’ll know in like half an hour!



Conquer my fear of sharks
THE MOTIVATION 3 months ago

The first steps are already taken.

1. RESPECT THE ANIMAL

Just facing the scientific fact that I come after a shark foodchain-wise in his territory, the ocean, turns “fear” into respect and admiration.
Learning that, e.g., a great white shark will not normally eat a human being due to the energy of hunting me not equaling the nutritional energy I would give him is somewhat… I don’t know…comforting…

2. GO SNORKELING

Just this week I took a big step and snorkeled in the Iononian Sea. The water is too salty for sharks, so it was perfect for me. Still, it felt awkward sometimes, though curiousity and the sheer beauty of what was to see pushed me to snorkel for hours on end.
Though the big step – diving with sharks – ironically seems further away now, I do feel a lot better now.

Although I still fear the game, it feels that now I know the player and his court.
