it took longer than expected, and I had a lot of back and forth, but at least I’m down to 109 now. It’s not even exciting though, I’m not getting any joy at all out of this weightloss.

So I had gone from 109 to 118 since my last post here. Now I am back down to 114 and dropping steadily. I should be 110 by the end of the weekend and hoping for 107 by the end of next week. I am bound and determined to get to 99 by July 13th!
I have far more then 10 now, but here are some of the meals I have learned to prepare for my veg bf and I!
- “chicken” sweet and sour stir fry
- vegan rice, bean, corn, “cheese”, burrito bowl with tortillas
- grilled eggplant melt
- garlic-basil pasta with breaded and baked eggplant on top
- “chicken” fried rice with spring rolls
- veggie dogs in a blanket
- veggie fiesta burger with avacado, “cheese” and salsa. Served with vegetarian baked beans
- spicy salsa grilled “cheese” with tomato soup
- Falafal, hummus and pita
- Stuffed tomatoes (stuffed with onion, corn, tomato, “cheese” and bread crumbs. then baked!)
- Cherry couscous pudding (like rice pudding but with a cherry vanilla flavor and the great texture of couscous)
