Well I’ve been starting small with hamburger helper and shake and bake. I’ve started to move on to other things like baking bread from scratch (no, no breadmakers or bread mixes just from scratch).
This weekend I did try a new egg recipe. I like cooking eggs they are pretty easy and except for poached I know how to cook omelets, eggs scrambled, over-easy, over-hard, etc. So a new recipe is always fun.
It turned out to be a southwest style egg which is pretty good:
3-5 eggs
1 wedge of lauging cow spredable swiss cheese
1/2 bell pepper
2 tblsp. of salsa
up to 1/4 tsp. of garlic
I also put mushrooms in the recipe, but it is up to taste.
Beat the eggs then when mixed mix in all the ingredients. Put in a pan and cook stirring like you would regular scrambled eggs. Depending on how much you stir the eggs do come out a bit runny and crumbly but this is normal.
Try it, it is very good.

We got to go all over the main island…stay in Waikiki…go to the Hard Rock Cafe and Planet Hollywood…Visit Pearl Harbor…Snorkel in Honoma Bay…we visited the Zoo and the Aquarium…swam in the ocean and saw a sea turtle up close…shopped and haggled at the flea market outside the Aloha Bowl…and got to see where my great uncles are buried at the Punch Bowl Cemetery!! Very Awesome!

Well I haven’t baked in several years…and really this is my first loaf I’ve baked by myself. I learned something though you either burn the bread or it comes out doughy like my loaf of amish white bread. Bread can be a deceptive little bastard. It can be dark brown…close to black…but still soft and squishy inside. That and for the life of me I can’t remember when I am supposed to put the shortening on the top—after it is done or right before?
I have more dough to bake so maybe I can make a better loaf tonight…we’ll see…wish me luck…
