I need to take a moment and be a complete bitch. Yes, I know – what’s new? but I’m so frustrated I think I may completely lose it! Let me lay it out… I went to bed around 10:15 last night, leaving hubby down here watching TV, because I was flat out exhausted! I set my alarm as usual, even though I’m unemployed with no where to go, because I still need to help hubby get up in the mornings. I awoke at 7:00 on the button & flipped because my alarm didn’t go off. Once I was fully awake I realized “Hey, maybe D turned my alarm off in order to allow me to sleep in for the first time this week”? I roll out of bed and see two regular mugs by the coffee maker. This alerts me to the fact that D is still home so I open the drawer and see his wallet, keys, watch, etc… I am now completely & totally pissed off! He knows we can’t afford for him to call off work, again, because he doesn’t get paid. Next thing I know here he comes slinking up the stairs with a total look of guilt on his face. He was up since 3:00 with horrible stomach problems so he called off. The first thing out of my lips is ”You ARE going to the doctor today because we can‘t afford this crap anymore!” Needless to say it wasn’t the cheerful “Good Morning” he expected. I followed this up with “That’s fine because I’ll be gone all day at the zoo while you go to the doctor!”. Needless to say that went over like a fart in church, not very well… He is now camped on the couch and I’m over here seething! I realize he has serious stomach issues but unless he man’s up, goes to the doctor and deals with it it’ll only continue to fuck up our lives. The doctor’s office opens at 9:00 today and I’ll be placing a call as soon as they’re open. He is going to have this looked at and with God was my witness this will be resolved sooner rather than later!!! GRRRRRR!!
INGREDIENTS:
4 (1 1/4 inch thick) pork chops
salt and pepper to taste
1 tablespoon olive oil
3/4 cup milk
1/4 cup water
1 (10.75 ounce) can condensed cream of chicken soup
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Season pork chops with salt & pepper. I used celery salt instead of regular. Place oil in a large skillet over medium to medium high heat. Sauté the pork chops for about 5 minutes per side. I added garlic and onions to the chops while they were browning…
3. In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9×13 inch baking dish and pour the soup mixture over the chops. Cover.
4. Bake at 275 degrees F for 2 1/2 to 3 hours.
