Based on a recipe in the December 2009 issue of the Australian Weight Watchers magazine.
Tasty, fresh and light. Will definitely make these again some time. Great for the warmer weather we’ve been having.

How I did it: I took a carrot from the crisper drawer in my fridge. I washed it - I never peel carrots, it's where the most fibre is - and sat down and ate it. Read how I did it…
How I did it: After thinking about it for a while, I finally took the plunge and signed up for Weight Watchers Unlimited and started going to meetings. In the past, I had had a few semi-successful attempts at losing weight, but I would always get a bit complacent after losing 3-4kg and before I knew it the weight would be back on. Once I signed up for Weight Watchers, there was no more hiding the truth: I would go every week and face the sc… Read how I did it…
This would be easier, I think, if I had a typical working week. Every day is different though, so I can’t really establish a daily rythym. I’m doing my best to make a schedule for the next day before I go to bed each night and I’m mostly following the plan. This will take some time for me!
I’ve sorted and deleted a heap of emails. The number of unread emails in my inbox is now down to about 100 instead of pushing 400. Still a fair bit to do, but I’ve made a lot of progress!
