knitting a scarf is the best way to get introduced to knitting – you can use a bulky yarn and big needles (#15 or even #19s) and whip one up quickly. a good yarn shop will help you choose yarns that will look gorgeous, and often have classes for not too much (my first class was $25) that will get you knitting right away. good luck!
