Andy and I had a very ambitious goal for our first shop. We selected a top-shelf location, designed our dream menu, and aimed for the stars. We got so very close, but the location we selected was new construction, and the project has been shelved for at least a year.
So, we’re back to the drawing board. I don’t think there are too many other locations in town that will support the “all-inclusive” idea. Well, there are a few, but they are likely not interested in talking to the likes of us.
Our new plan is to scale back and focus on what we do best: serve the best damn cup in Charlotte. Yes, we’ll still have a few desserts, and yes, they’ll kick ass. But, the menu will be smaller and more focused, and so will the message. Not only will this reduce the cost to open, but it will help to keep our focus in the market.
Once we open, everyone will know our mantra: Charlotte’s best coffee. Period.
