So easy so good!
Cook some chicken in lime infused olive oil. When it’s starting to get brown, throw in some lime juice. Meanwhile, take four tortillas (corn or flour) and microwave for 30 sec to get them soft. Scoop some black beans onto each tortilla, then the chicken, and finish with grated Mexican blend cheese. Wrap the tortilla and place seam side down in square dish, do the same with other 3. Pour Frontera Green Enchilada Sauce by Rick Bayless on top, then cover in cheese. Bake for 15-20 minutes at 400. Voila!!!!!! 20 months ago

Peas, tomatoes, and peppers have all started to come in. Watermelon is starting to get a touch out of hand, potato plants are mid-thigh on me, and strawberries are starting to turn red. I have a cayenne pepper plant that already has 10 peppers on it!
Unfortunately the spinach and lettuce are starting to bolt, which means I need to harvest them soon before they get bitter. Also, I think a rabbit ate my beets. But otherwise, things are going splendidly! 1 year ago

How I did it: This one is kind of cheating, as I basically left my husband do deal with this. We feel that as he is the spiritual head of the household, he should be responsble for taking a 10% portion of his check to the church. It seems as if we have been doing well financially too since he has been so good; getting side jobs and the like. I just know that I can't expect something in return for giving God back the money he has given us the ability to earn. Read how I did it… 2 years ago
3 eggs
2 egg whites
1/4 of a red bell pepper, de-seeded and finely diced
1/2 of a zucchini, finely diced
salt & pepper
low fat colby jack cheese, grated
1/3 package of bacon, finely diced
2 slices of wheat bread.
Preheat oven to 400 degrees. Spray a small frying pan with Pam, and saute the bell pepper and zucchini for a couple minutes. Meanwhile, fry the bacon. In a bowl, whisk all ingredients together. Spray a 6 cup muffin pan with Pam, and place circles of bread that are the same size as the muffin cups in the bottom of the cups and press them in. Pour mixture on top of the bread in the muffin pan. Place in oven, bake for 20 minutes, or until a knife comes out clean.
Review – OMG this was sooo good! And it was a Weight Watchers recipe too! If you want to cut down on prep time in the morning, do what I did: saute the vegetables and whisk all ingredients together the night before. Then in the am you only have to do the bacon and the baking! Please try this recipe you will not be disappointed :-) 2 years ago
Indian Tandoori Chicken
2 lbs chicken, cut into pieces
1 t salt
1 lemon, juiced
1 1/4 cups plain yogurt
1/2 onion, finely chopped
1 clove garlic, minced
1 t freshly grated ginger root
2 t garam masala
1 t cayenne pepper
1 t yellow food coloringf
1 t red food coloring
2 t finely chopped cilantro
1) Remove skin from chicken pieces, and cut slits into them lengthwise. Place in a shallow dish. Sprinkle both sides of chicken with salt and lemon juice. Set aside 20 minutes.
2) In a medium bowl, combine yogurt, onion, garlic, ginger, garam masala, and cayenne pepper. Mix until smooth. Stir in food coloring. Spread yogurt mixture over chicken, cover, and refrigerate 6-24 hours (the longer the better).
3) Grill on medium high heat, garnish with cilantro.
Indian Saag
1/2 cup butter
2 t cumin seed
1 green chile pepper, seeded and diced
2 cloves garlic, chopped
2 T ground turmeric
1 lb chopped fresh mustard greens
1 lb chopped fresh spinach
1 t ground cumin
1 t ground coriander
1 t salt
1) In a large skillet, melt butter and cook and stir cumin seed, chile pepper, garlic, and turmeric until fragrant, about 2 minutes.
2) Stir in chopped mustard greens and spinach a little at a time, adding tougher parts first. Continue to add greens, cook and stir until all greens are added and all are thoroughly wilted. Stir in cumin, coriander, and salt. Cover; reduce heat and simmer until greens are tender, about 10 minutes, adding water as needed to keep the greens moist.
Review:
I really didn’t care for this meal on the whole. I think the combination was a good concept, but I don’t think it tasted all the great. The chicken was hot pink thanks to the food coloring, and although the taste was fine, it wasn’t the most visually appealing. The saag was too bitter, so I guess I found out I don’t care for mustard greens. At least it was a good thing to try and test my skills. 2 years ago

How I did it: I followed people that are interested in the same things as me: crafting, garage sales, repurposing, etc. One of these people posted a tweet about going to an estate sale in a nearby city. I asked them if they were from MI, and they said they were, so we decided to meet at the sale. We pretty much knew each other immediately, although neither knew what the other looked like.
