This was a total experiment, and it worked! Yum! No fake cheese needed for a broccoli rice casserole :)
2 big stalks broccoli
1 big red bell pepper and a couple of snack-sized orange ones
1 onion
handful of baby carrots
oil for stir fry
a few spoonfuls of green thai curry paste (I used this)
1 c uncooked brown rice = 3 c cooked
1 can coconut milk, full fat of course
Cooked rice. Chopped and stir fried veggies. Added curry paste and coconut milk to veggies. Threw in cooked rice and stirred it all around. Dumped into casserole pan and cooked 30 min at 350F. Easy peasy and yummy :) 3 weeks ago

but we will probably not plant all of those things! I’ve got to find out how deep the dirt needs to be for those root veggies (beets and sweet potatoes).
I’m pretty confident that we can plant beans, chard, okra, and peppers. Hopefully if I start them from plants instead of seeds, I can get some tomatoes going, too! 4 weeks ago

I’ve been thinking of doing a raised bed, and my sister texted me the above photo. I’ve got a friend who can get free, discarded pallets from his workplace, and my significant other already has garden cloth. This doesn’t have to last forever; eventually I’d like to build the self-watering kind of raised beds.
Has anyone tried this? I’d love your thoughts and tips. I am wondering if it’s deep enough, or if there are other problems I haven’t anticipated. Thanks!! 4 weeks ago
