Cinnamon Rolls! 12 months ago

Not exactly Cinnabon quality….but hit the craving nonetheless! Took much longer to make than expected. I used a basic recipe from the old classic BHG cookbook…and it was really basic. Next time I will find a copy-cat recipe. The rolls were eaten up nonetheless!!

Still trying to get the hang of my gas oven’s temps.

Um...forgot to update about Cake Part II 13 months ago

Cake Part Deux….well….I sent hubby to the store for cake mix and eggs. In his “thriftiness” he decided to stop by the dollar store and found they had cake mix and eggs, so he proudly brought them home with every good intention.

The problem? I picked up the cake mix, looked at the directions, and saw it called for 1/2 cup soybean oil. Soybean oil???? I had no soybean oil, only vegetable oil, so I attempted to substitute. Then came the eggs…a few organic eggs left, their yokes were HUGE. Then came the dollar store eggs….puny, little eggs with puny little yolks.

Mixed them up and popped the cakes in the oven…and waited…baked a full 45 minutes and then some….finally the outsides were looking very well done and the cakes were the right size so I pulled them out….

FWOP! The centers of BOTH cakes collapsed, creating huge craters in the center, and the former tops floating in a sea of pudding-like cake batter.

Nope….these cakes were not scouts auction material. I abandoned plans.

I DID however, achieve this goal for last week, even though it did not turn out as planned!

Cake bake part II 13 months ago

Well, my first attempt at making box cake failed miserably. They came out flat as pancakes in spite of following all directions. Tonight we try for part II!!

This weeks project: Cub scout cake 13 months ago

OK…so we have an auction coming up at Cub Scouts….a cake auction….that I have to make a cake for with my son….and decorate….

Pineapple upside down cake...without the pineapple! 14 months ago

OK…so not from scratch. Stupid me thought the pineapple came in the box mix. It did not, so I went ahead and made it without. The cake still turned out good though, and my guests were happy to eat it!

Mmmm Banana Bread! 16 months ago

Yum. I can smell it baking right now. Got the craving for banana bread and saw some bananas laying around so I made some. My 7am project. Everyone else woke up to smell of banana bread baking. I love that!

Son put in a special request for raisin bread. Will have to remember that one as I’ve never made it before.

Blueberry Muffins... 18 months ago

From a box….not quite homemade, but I forgot all you had to do with those is add a cup of water and know how to open a can to get the blueberries out. Sheesh…this is too easy. If I can premix my muffin mix myself, with all the huckleberries I have and gather yearly, I should be able to make blueberry muffins easily all the time!

My very first baking of white bread! YUM! 18 months ago

I made 2 loaves of white bread today from my new book….and they are incredibly perfect considering it was my first time ever….

The crust is beautiful. I am definitely doing this recipe again! Nothing like warm bread with melted butter!
