Living In God's Exquisite, Miraculous SufficiencyHerbed Leg of Lamb

When SK came over, I put a leg of lamb in the crock pot for half the day on high. I placed slits in the leg and put cloves of garlic in those slits. Then, I sprinkled ground sea salt and ground pepper all over the leg. Afterwards, I rubbed thyme & rosemary all over. Placed it in the crockpot for about 6 hrs with a little water. Oh, forgot, I poured some lemon juice over the leg.

The meat was so tender, juicy.

For sides I made a cuban black bean that consisted of black beans, cumin, red/green/orange peppers (chopped), sea salt, ground pepper, onions and minced garlic. Sauteed all this for about 15 minutes.

The other side was a saffron rice. Used organic brown basmati rice in the rice cooker. Instead of water, I used organic free range chicken broth, stirred in some tumeric and saffron. That gave it wonderful flavor. Closed the lid to the rice cooker and let it cook. AFter it was done, I stirred in chopped cilantro.

This whole me was orgasmic, well, nearly. SK had 2 big helpings and the kids seemed to like it. I kept to my cleanse portion and have had this same meal now about 6 times (small portions). 4 years ago

Living In God's Exquisite, Miraculous SufficiencyPerfect Meals

I love using my crockpot. Throw a bunch of stuff in and let it cook all day.

The last meal I made was a cuban pork stew dish. My kids really loved it.

  • shallots
  • lime juice
  • cilantro
  • cider vinegar
  • oranges
  • sea salt
  • cumin
  • oregano
  • arrowroot
  • coconut milk
  • sea salt
  • pork ribs
  • red potatoes
  • water chestnut
  • zucchini
  • sliced onions
  • corn

Put all this in the crockpot for the day and the pork just falls off the bones. Give the dogs the bones, which they love.

Serve all this over brown rice. Yum. 5 years ago
