to be very productive in the kitchen. Making 4 more batches of blackberry jam, have frozen literally kilos of zucchini for the winter, and am also making zucchini relish…

6 zucchini – grated
1 cup crumbled feta cheese
1 cup plain flour
2 eggs lightly beaten
1/2 cup fresh dill
1/2 cup chopped fresh mint
Mix all ingredients until it comes together as a thick batter. Place into an ovenproof dish and cook at 180C for approximately 45 minutes. Serve warm or cold with salad. If you have the time this can also be made up as fritters and fried for 2-3 minutes both sides. 6 years ago
sees us picking a basket full of mushrooms. March is the month that all our button mushrooms pop up. So tonight I will cook some up with garlic, zucchini (of course) and onion. There is still going to be a lot left over for breakfast with toast – yum!! 6 years ago
I have SO many zucchini, it just isn’t funny. My poor little plants struggled so much at the beginning, and are now relishing the very hot weather, and consequently, I have literally hundreds of the things. So I am presently making a zucchini corn pie, and tomorrow I will bottle up some pickles. Oh, and the neighbours are being given bags full….. 6 years ago
Today I found out that I can freeze zucchinis – woo-hoo. How good is that. Now my glut of zucchinis will see me thru winter for sauces and casseroles. Am also today pickling my crop of beetroot. A wonderfully productive day….......... 7 years ago
O.K. Well, I just had to find a way to cook so MANY zucchinis. This morning I have made a zucchini slice (smells divine in the oven), and am about to make a chocolate zucchini cake. So all is well here. Am being creative and inventive with the excess vegetables. Going good….................... 7 years ago
Another entry for adding on to my self sufficiency goal. I have so many, many vegetables now and I don’t think I can freeze everything!!! I have to try and find new recipes, invent new recipes and learn to use these vegetables creatively in a variety of different ways. 7 years ago
