How I did it: I started out by logging all of my food on a nutrition site called NutriMirror - it's free, and as long as you are thorough with logging it gives a very accurate picture of where you are getting your nutrition. It made it much easier for me to monitor my calorie intake, and also gave me a great picture of where my diet was lacking.
