    Eggplant Parm – this is only one of my most favorite things to eat ever, so it it’s surprising I’ve never made it myself. I made one of the healthier baked-not-fried variations, but still good! (would have been better fried though….)

    Blueberry Muffins – Very easy and tasty. I used frozen blueberries.

    Curried Lentils with Carrots and Peas – from Vegan Planet – Pretty simple to make and can be made with pantry ingredients I almost always have around.

    Ok, so my challenge of 20 new recipes is DONE. I have learned how to make:
    3 Muffins
    1 Salad Dressing
    2 Side Dishes
    1 Soup
    13 Main Dishes

    I would say about half or two-thirds of them are recipes that I would definitely make again. I’ve already made the Butternut Squash Muffins twice and the Orange Tofu three times since I’ve started this little project of mine.

    YAY FOOD! WORTH DOING.



    17) Fried Spaghetti 4 months ago

    So unhealthy, but still so good. Well I did use whole wheat pasta. It’s quick and easy and cheap. Sautee half an onion and some garlic in oil, add a little tomato paste and then the spaghetti, and then some salt & red pepper. I think this would taste good if you added vegetables (maybe mushrooms) too.

    Vegetarian Chili – okay. I know veggie chili is a vegetarian classic, but maybe I just don’t like chili that much except on nachos. My recipe made a lot of food!!

    This was amazingly easy and you can customize the toppings any way you want! I don’t know why I didn’t try this before…

    This was so good and really easy! If you have an orange and a block of tofu, you’re pretty much set. A keeper.

    Tofu Loaf – Country Life Vegetarian Cookbook

    I’ve always wanted to try a vegetarian meat loaf-type dish. This one involved tofu, rice, walnuts, onions and some herbs and seasonings. It tasted fine but completely fell apart even after I baked it for 40 minutes. I’m not sure if I did something wrong, because there are no pictures in this cookbook.

    9) Vegan Scalloped Potatoes (Potatoes Au Gratin): from the Country Life Vegetarian Cookbook. Yummy!

    10) Empanadas: I made three kinds – spinach, bean & cheese, and apple(sauce). Messy to make, but tasty. Do not reheat well, at least not in the office microwave.

    I haven’t really cooked eggplant before except in the oven. This was good!
