- BRUNCH: Rosemary bread (from “La Brea” as licensed & produced by a store bakery near us) with lowfat cheese spread (the dairy calls it “quark,” from our weekly farmers’ market), accompanied by sliced banana & Anjou pear, served with fresh hot coffee (from our Bodum pot)
- SUPPER: Grilled cheese sandwiches (Colby w/red pepper flakes on oatmeal bread—my “go to” combination, lately) & Progresso lentil soup.
Although these meals are more about assembling than cooking or baking, they took a bit of thought & some prep time – & were good – so I’m including them here. smile1 week ago

A quick & easy hot & filling meal, made in one pan: cooked white rice (steamed yesterday), heated with sauteed onions & wild ramps (from the farmers’ market), stirred into scrambled eggs (from a friend’s farm), & the mixture then seasoned with a little black pepper & sea salt & some (low sodium) soy sauce. yummy1 week ago

Cooked a frittata in a saute pan on the stovetop, using eggs (from our friend’s farm) & some Colby cheese, with a greenhouse tomato & some ramps (wild leeks) from the farmer’s market, seasoning it with a little black pepper & some sea salt, & serving it with slices of baguette. tasty2 weeks ago

“Baked Eggs”: a fluffy mixture of eggs (laid by free-range hens from a friend’s farm, 1/3 of the yolks removed) and a little 2% milk stirred together, then seasoned with some black pepper & a little sea salt, & (when cooked through) topped with melted Colby cheese. smile4 weeks ago

Well, this was a “special” experiment. I tried a bread that would last me all week, a replacement for my store-brand kind. Without adding calories to a day in comparison. I think it worked :)

I tried to make some corn bread – with the minimum amount of ingredients. It was tasty, but I think this one can be improved. Perhaps more yeast, more water or even honey…
