gracemSunday, Monday, and Tuesday

Each week it seems that I fixate on once source of recipes and go with it. This week it allrecipes.com.

Sunday I made burritos with beans, cheese, rice, and pico. Compared to the other things I’ve been making lately they left a lot to be desired. The rice recipe is: http://allrecipes.com/Recipe/Spanish-Rice-Original/Detail.aspx

Friday was the amazing tofu stir fry with some rice! Tonight we are making pineapple and Canadian bacon pizza with salad. I was pretty tempted to just order some pizza in which wouldn’t technically be going out to eat when we ran into some dough issues. We still haven’t masterd the art of making our own dough. Wednesday we had left over slow cooker mac and cheese. It was just as good as the first time. Tonight we are having some pad thai noodles with shrimp. Since I’ve been pretty bored with the amount of salad or green beans I’ve been having fruit with supper. It’s nice, refreshing and almost feels springish. 6 years ago

Yesterday I made a batch of mac and cheese in my new awesome crock pot. It’s amazing! Not so much low fat… Today I’m making chicken cordon bleu with a reduced fat recipe for garlic mashed potatoes (my favorite!) and a salad. For lent I’m giving up going out to eat and chocolate. I’m not Catholic but I think it is good to challenge myself. If I make it til Easter I will mark this goal as done! 6 years ago


gracemSaturday and Sunday

Last night we did go out to eat, it was wonderful! We went to a great Chinese food restaurant. We always try something new everytime we go there and we take turns choosing what will go with our pork fried rice. I think the fact that I hadn’t gone out to eat in a long time made it all the better. Tonight I made one of my favorite super easy meals. I just take a package of the refridgerated ravioli and a casear salad bag mix. Cook the ravioli and cool it and toss with the salad. I also made a crock pot full of tortilla soup for lunches this week in my brand new crock pot! 6 years ago

Thursday night was our attempt at sushi. All I’m going to say about it we ended up eating out and we are going to try it again tomorrow night. Tonight we are having chicken breast, texas toast, and green beans. I’m super excited about my menu for next week, hopefully it will all work out. 6 years ago

Jason got “creative” in the kitchen last night and decided to make shrimp burgers. They were amazing! Although not the best for my weight loss it was still better than something I would have chosen if we had gone out to eat. Tonight we are making sushi! This is our first time attempting it and could be pretty interesting. I’m planning on taking a lot of pictures. 6 years ago

Yesterday I made a whole crock pot of chicken noodle soup for lunches this week. So for lunch today theres the soup and for supper it is baked potato night again! 6 years ago

Yesterday we had leftover pizza for lunch and spaghetti with texas toast for supper. Today we are having left over noodles for lunch and a pasta salad for supper. Pretty heavy on the carbs, but I try to balance it with proteins and such. 6 years ago


gracemBBQ Chicken Pizza

Tonight we made BBQ chicken pizza. It was pretty tasty and super easy. Jason used to work at a pizza shop many many years ago so he is always in charge of the crust and I do all the toppings. We try to stick to thinner crusts and low fat cheese to cut down on calories and fat. I’m sure this whole pizza once a week thing is just a fad but again its convenient since there are always left overs! 6 years ago

Doesn’t this look pretty? Haha, this was pretty tasty so once again I really don’t mind having left overs. It would be really easy to slip up on this goal since lately Jason and I haven’t been able to eat supper together more than two or three times a week due to opposing work schedules, but left overs make it easier to avoid the temptation of going out to eat. 6 years ago

I kinda of figure you can make any kind of casserole with the right ingredients. Tonight I made a half ass enchilada bake casserole thingy. Sometimes I just kind of feel like emptying my cupboard into a corningware dish and sprinkling cheese over it, like tonight. Tonight my combo was black beans, chicken, layers of corn tortillas, cheddar cheese, green chiles, and some southwestern soup. It was not the prettiest thing ever but it was damn tasty. Some salad rounded out the meal. I’m not going to lie we did go out when it was one degree and get some dairy queen. Considering I’ve been cooking at home for two weeks now it’s not too bad. 6 years ago

Monday we had the left over hot dogs from the “picnic” and some salad. Yesterday I got really sick for some weird reason. Long story short after puking all over my bed I wasn’t really in the mood to cook supper. Jason whipped up some amazing bbq’s. They really helped settle my stomach. Since my appetite wasn’t huge yesterday, we have enough left overs for the same thing tonight. These are some left overs I’m really looking forward to! 6 years ago

Eat your heart out Rachel Ray! I made a mini imitation Thanksgiving for supper tonight in 30 minutes. We had dressing stuffed chicken breasts with mashed potatoes and green bean casserole. Sadly no pie… 6 years ago

When we can’t have supper together until later I make a somewhat lighter meal. I really like to do baked potatoes. The easiest thing to put on it is one of those small frozen things of broccoli and cheese. On a cold night like this it was very satisfying. 6 years ago

So since I’m not sure it counted yesterday I’m not really sure if it counts tonight but at least we are not going out to eat when we have our pizza left overs tonight. I really do have a full menu planned for this week including lunches as well. 6 years ago
