    week one: fried chicken 15 months ago

    I learned how to make fried chicken on Sunday and decided that from now on, I am going to learn a new recipe every Sunday. I don’t have many recipes for en trees, so I am going to try and build that up without having to throw in casseroles, I hate casseroles.

    I’m not a very good cook at all and I promised myself that I would try cooking more often. I know my husband and son would love to try some new things.

    Today, I made a recipe featured on the back of a Velvetta Macaroni & Cheese box. It called for:

    1lb of boneless, skinless chicken, cubed.
    1 cup broccoli.
    1 cup chopped carrots.
    1 cup milk.
    1 cup water.
    and of course, one box of velvetta.

    Firstly, you cook the chicken thoroughly and a large skillet (spray skillet first with a cooking spray, or olive oil). Add the pasta shells, water, and milk. Brink to a boil, stir occasionally. Cover and turn down heat. Let simmer for 10 minutes, then add the broccoli and carrots. Simmer and stir for a little bit longer, then add the packet of cheese and stir.

    Today I am making Turkey Chili from a recipe I saw on the Food Network.

    1 tablespoon olive oil
    1 cup chopped sweet onions
    1 tablespoon minced garlic
    1/4 cup chopped yellow bell peppers
    1 pound ground turkey
    1 (28-ounce) can crushed organic tomatoes, undrained
    1 (16-ounce) can red kidney beans, drained and rinsed
    1 tablespoon chili powder
    1 tablespoon sugar
    2 cups low-sodium chicken stock
    1/2 teaspoon garlic powder
    1 teaspoon hot sauce (recommended: Tabasco)
    11/2 teaspoons sea salt
    1 teaspoon dried basil
    1/2 teaspoon dried oregano

    In a large skillet, saute onions, garlic and bell peppers in olive oil over medium heat until onions are translucent. Add ground turkey and cook until browned.

    Add remaining ingredients and stir well to combine. Reduce heat to low and simmer for 1 hour, stirring occasionally.

    Today I made Monkey Bread with Chris to bring over his parent’s house for dinner. It was delicious!

    preheat oven to 350 degrees.

    in bowl:
    • 2/3 cup sugar
    • 1 tbsp cinnamin
    • 4 pack biscuits

    cut biscuits into fourths and roll them in the cinnamin/sugar mix.

    pour walnuts into a bundt cake pan, so that there will be a layer on the top of the dessert. (optional)

    place the biscuit pieces in the bundt pan (evenly all around).

    in a sauce pan:
    • 1 tsp cinnamin
    • 1 1/4 sticks margarine
    • 1 tsp vanilla
    • 1 1/2 cup sugar

    bring to boil and then pour over biscuits in the bundt pan.

    bake for 35 minutes.
