I made waffles tonight for dinner for myself and my kids. I doubled the standard recipe in The Joy of Cooking, using 100% whole wheat flour, and the minimum recommended oil. I whipped the egg whites in the food processor, and I think it worked out all right.
The blueberry sauce I made by chopping up a banana and about 1 C of frozen blueberries in the food processor. I added some honey, maybe 1-2T, to make it a bit sweeter. My kids put peanut butter on the waffles, so it makes a reasonably healthy dinner.
I’m expecting to make chili-mint-garlic green beans with brown rice tomorrow night. (And tofu fried in yellow curry sauce from Trader Joe’s.)
