    Half way 8 months ago

    Did both front shoulders and the neck yesterday. It is so time consuming! Also ground about 40 pounds so far. If all goes well, I will get the ribs, back, and hind quarters done today. They are actually the easier parts.

    Butchering today 8 months ago

    The beef has hung for a week and today is the day to start working it down. Should be done tomorrow afternoon. Takes soooo long lol.

    Dropping today 8 months ago

    This is a little sooner than I wanted since we did a beef last month, but today I am dropping¹, skinning, gutting, and hanging another beef. This is really the easy part lol. Skinning is very easy when you have good knives. Have a safe and blessed day!

    ¹Dropping – less grotesque way to say Killing. Often overlooked by PETA when they are looking for innocent targets to impose their agenda upon.



    Two down 10 months ago

    I am learning but it sure is not easy work lol. Just finished my second beef at 7:30am today. Took a total of 18 hours to butcher it. The hardest part for me was carrying in the hind quarters by myself. The first beef I did was a steer two years ago. I did a sloppy but effective job on it. This time it went much better. Good knives is the key. I have several good knives but I recently bought a Farberware utility knife. It is a much cheaper knife than some of my others but it held an edge longer than any of them and sharpened better than the rest. My Gerber skinner worked the best for initially skinning and gutting, but the utility knife did all of the meat prep before steaking and stuff.

    This is a lot of work. It is worth it in a way and at the same time, it is soo much work to do, I am very happy I will only be doing one or two a year. After a few more I should be much better at it all.
