    Today I got some lovely fresh salmon and combined ideas from recipes that I found. I spritzed it with lemon juice, rubbed in some dijon mustard, and wrapped it up in foil with some celery and tomatoes. I baked the packet at 350 until the filet looked done (it must have been somewhere around 30 minutes). I served it up with some fresh steamed asparagus. Quite delicious, I must say!



    Why so intimidating? 17 months ago

    I’m not sure why in my mind I think fish is so difficult to cook. It could be just that I don’t know how, and it’s different than other things like chicken or steak. But I do love it, and right now only order it in restaurants because I’m afraid to cook it.

    I love fish, I truly do. And I know that I should eat more of it…but I’m so afraid that I’ll mess up cooking it (I’m not a great cook to begin with) that I refuse to buy it at the store.

    How to cook fish 3 years ago

    I was so afraid to try, and it was so simple. Now my daughters enjoy fish every saturday, cooked in the oven, with potatoes or other vegetables on the side.
