I’ve not documented all of the meals, of course, as that would be tedious, but I have made an effort to vary my diet. I enjoy vegetarian food, within reason. The things that give veggie meals a bad reputation are often those which imitate meat, often, very badly. Meat is meat, and vegetables are not – both should be appreciated for themselves. I have no desire to give up meat entirely, as I find it necessary to my personal nutrition and well-being. Still, veggies don’t need to be a mere accessory.

I made this last night and loved it, not least of all because it’s not labor intensive. Cut up some veg that you like, I used eggplant, carrots and cauliflower, shallots, a sliced leek and some garlic cloves, put them in a pan, toss them with olive oil, herbs – try cinnamon and oregano with this blend – then roast at 425 until tender. Pour some tomato sauce over it, then put it back in the oven while you cook some pasta or couscous. Serve with some cheese if you want, and parsely garnish, if you want it to look fancy.

I bypassed McDonald’s, despite being utterly hungry. (I didn’t plan my meals well today. I had a tiny breakfast, when I knew I’d be trapped in a chair for several hours.) I went straight home instead, and ate a boca ‘chicken’ burger, without cheese. I have no idea what they’re made of, but I’m starting to find them tasty. I may find myself eating Boca products more regularly.
