I was watching Gina Neeley (sp) make the dough and noticed that she did not roll it out. She took the dough from the bowl, sprinkled flour across the granite countertop to prevent sticking, and handformed the dough into a square large enough to cover the peach cobbler mixture in the baking dish. How simple is that. No rolling.

I forgot that I had taken this goal off of my list. I won’t consider this goal completed until I can make it from scratch and off the top of my head. Practice makes progress. I used my great aunts roller so there was some nostalgia connected to this endeavor.
Went to FoodNetwork.com and found alot of variations for this dessert. I don’t want to use peaches from a can or prepared pastry dough (not that I am against shortcuts). The actual goal is to make this from scratch with a foolproof recipe. I have my great aunt’s wooden rolling pin so this is a way that I am honoring her memory. The process is the goal along with the final result. To ensure that I have done this right, my mom and siblings are the official taste testers. I want it to look as mouthwatering as this pic.
