    I’ve been having lots of vegetables all week! I’ve had lots of tomato sauce, kidney beans, cauliflower, broccoli, etc. in big bowls. Now, I need to aim for at least three servings a day which I’ve kind of been doing anyway.

    • 1 1/2 serving of baby peas & black beans
    • 1/2 serving of tomato sauce

    I’m far from 5 servings a day but at least these snuck in there.

    tuesday
    • 1 regular potato
    • 3.5 servings of navy beans (most of the nutrients were drained)
    wednesday
    • 1 sweet potato with cinnamon
    thursday
    • ? (I don’t remember…)
    friday
    • 1/2 cup beans and green peas
    saturday
    • 1/2 cup of mixed veggies (cauliflower, zucchini, carrots, etc.)
    • lots of popcorn…
    • tiny bit of hashbrowns
    sunday
    • tiny bit of spaghetti sauce

    (The weekend could have been a lot more veggie-fied…)



    Veggie Power! (2/31) 1 month ago

    On Saturday, I had cheesy potato perogies with a small amount mixed veggies which means cauliflower, zucchini, carrots, & beans (1/2 serving*) and half a butternut squash (1.5 servings). I also had a single scallion. Everything else I ate wasn’t as healthy but Kevin had a lot of salami he needed to get rid of :D.)

    Today, I had the former again (1/2 serving), but I also had a bowl of whole-grain pasta with some tomato sauce (1/2 a serving) and then late had a small baked potato (1 serving). And a small mango but that is a fruit. Then I added peas to rice and beans dish (1 serving). This weekend I had the most vegetables I’ve had in a long while.

    I’m estimating the servings.
