make kimchi

We bought two nappa cabbages the other day for Shabu Shabu… but only used one.

So, I think this is a sign that I should make kimchi!!
Now I just need to find a recipe that I wanna try.

I couldn’t find the Korean chili flakes (gochukaru) I need for making my own kimchi. But I’ll keep looking. I did find, however, a Japanese “Kimchee base” (a sauce really). It will do for now… Hope it’s edible!

is proving more difficult than I first thought. No Korean red pepper flakes (or powder, or paste) to be found…

Chinese cabbage, Korean chili (if I can find the right stuff!), large glass jars, ginger, garlic and fish sauce. Maybe something else as well.
