And here is a secret that I have found: use farm fresh eggs from a local farmer’s market. Really fresh eggs straight from a local farm have a much larger egg whites to yolk ratio and produce the yummiest, fluffiest whipped whites. In addition, I always beat the mixture and sift the flour and sugar a bit more than recommended, to produce a fluffier, lighter batter.
This recipe is great, though – and so simple. Delicious with fresh whipped cream (I find that 1 pint of Organic Farms organic whipped cream works the best, and make sure that you regrigerate the bowl you whip in beforehand to help preserve consistency).
