This is what I mean by ‘become an excellent vegan cook’ – being able to throw stuff together and for it to not taste like shit.
The chickpea things were just mashed chickpeas and whatever herbs and spices were in the cupboard at the time. Plus a wee dash of soya milk to hold it all together and soy sauce, which I add to practically everything now. I’ve made them twice now and they’re fab.
The wedges also went surprisingly well, considering they were a first attempt. The trick is to parboil them first. ;)

Yes, really. My (omni) mother can’t get enough of this stuff and neither can I. My gran, who used to bake wonderfully, holds it in high regard as well, which makes me immensely proud.
I have no pictures; it gets eaten too quickly.
Here’s the recipe:
Prep time: 15 minutes, cooking time: 1 hour
Equipment: 8×4 bread pan
Ingredients:
1/2 cup brown sugar
1/2 white sugar
1/2 cup margarine, at room temp
3 very ripe bananas
2 cups flour
1/2 teaspoon baking soda
1/4 cup vanilla soy milk, mixed with 1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt
Directions:
Preheat oven to 350F. Spray a 8×4 bread pan with non-stick cooking spray, or lightly coat with margarine.
Sift together flour, baking soda, salt and spices.
Cream together the margarine and sugars. Add bananas, soy milk and vanilla.
Add the wet ingredients to the dry. Mix well. Pour batter into pan. Bake for an hour to an hour and ten minutes.

OK, I cheated a bit a lot by using korma sauce from a jar. And I know it looks like cat sick. But it was dead nice. :)
Yum! Very tasty, so much so that I ate it too quickly to get a photo of the finished product. :D
OK, it wasn’t amazing and definitely not as good as my dad’s, but it’s a start. I know where I went a bit wrong now so hopefully I can tweak the recipe each time ‘til it’s perfect. Having said that, it was very nice but then I would say that, wouldn’t I? :P
This actually turned out surprising well, considering it’s the first cake I’ve ever made from scratch, vegan or not. As you can see, it’s a chocolate cake. Sandwiched together with strawberry jam and topped with some runny icing my mum quickly made. It has (not sure whether to use the past tense or not, for it’ll certainly be all gone by tomorrow night) a certain taste to it I can’t put my finger on (maybe the vanilla essence?). But still, it was perfectly nice. Served with lashings of vegan cream, of course.

The nicest pair I’ve seen in a while.

I made delicious pancakes for breakfast on Sunday, for the family.
They were so miraculously delicious…
I haven’t craved pancakes in ages, even when I wasn’t vegan.. But this weekend, I just suddenly NEEDED pancakes.
So I made them.
Even the omnivorous family enjoyed them!
This was a first for me (for tonight was my stew deflowering) and, rather surprisingly, it turned out to be bloody brilliant. It comprised lentils, carrots, courgettes, mushrooms, and a whole lotta love. My tastebuds were so grateful that if I could’ve got off with myself, I would’ve done.
Yet for once, I don’t have a proper picture. cries hysterically All the pictures of it on my phone got corrupted or something so whenever I try to view anything other than the thumbnail, it goes all weird. So I’ve included a helpful diagram drawn after the fact.
I shall make it again though. I’m not sure if that’s a promise or a threat. Both, perhaps.
