
Last week I made spiced chicken burgers with coriander and this week I made “Macarona Bechamel”, an egyptian recipe as shown in the picture above :)

turned out ok. i made a few modifications:
added sesame garlic dressing, no bread crumbs
i got curly kale which is much more tough than the recommended tuscan [dinosaur] kale. i did massage the kale to tenderize it. also beat it with a spatula and added salt to break it down more.
pretty chomparific.

Fruit AND veg! I have fallen in love with these muffins as a health injection for my lunches. They’re fun to make, too, with a gorgeous bright, colourful batter. Recipe adapted from here and photo stolen from there as well. (Their food stylists beat my Kodak.)
Ingredients:
~ 1 cup whole wheat flour
~ 1 cup of white flour
~ 1 cup sugar
~ 1 tsp baking powder
~ 1/2 tsp salt
~ 1/2 tsp baking soda
~ 1 tsp ground cinnamon
~ 1/4 tsp ground nutmeg
~ 1/2 cup canola oil
~ 2 eggs
~ 1/2 cup fresh unsweetened applesauce
~ 1 tsp vanilla
~ 3 drops orange oil OR 1/4 tsp orange extract
~ 1 cup grated zucchini (about 1-2 small ones)
~ 1 cup grated carrots (about 1-2 big ones)
Directions:
Preheat oven to 350 degrees. In a bowl, combine the dry ingredients: flour, baking soda, salt, sugar, nutmeg, cinnamon and baking powder.
In another bowl beat together oil, applesauce, eggs, vanilla and orange.
Add the dry ingredients in parts to the wet mixture and mix to reach a smooth consistency. Stir in grated carrots and zucchini.
Spoon into the lined muffin cups- the veggies make this a dense batter, so fill them to the brim. Bake for 20-25 minutes. Cool on wire racks. 3 months ago

The last time I baked brownies I realized my go to recipe is because other people like it. My current brownie recipe is okay, but not on the same level as other desserts I make.
It’s time for me to find more suitable brownie recipes for a basic brownie and a gourmet brownie. I have several types of quality cocoa, chocolates and chocolate chips in my pantry and it’s silly for me to continue buying a cocoa blend to make brownies I don’t really like. 4 months ago

Most of the recipes I made for New Years I have made before. Only two new recipes:
Queso Blanco Dip (will try different recipe next time)
Caramel Sauce (for chocolate flan cake)
Not happy with the results of either recipe, but they were only a small part of what I cooked, so it wasn’t a big deal. 4 months ago

I usually am too busy making hundreds of ravioli and about a dozen different Italian cookies to try new recipes during the holidays. This year is a smaller celebration and will attempt to make tamales for Christmas Eve dinner. Trying at least ten new recipes.
