I have baby spinach, couscous, whole-wheat spaghetti, and I’ve cooked spiced ground beef that I can make meals out of for the next couple of days. For breakfast: oats, eggs or plain yoghurt with some fruit. 2 months ago

Tonight, I didn’t have too much time to cook dinner, so I tried a new recipe with the ingredients I had – left-over chicken, fettuccine, my trusted dried Italian herbs, my stock of limes and some raw baby spinach that was almost ready to be tossed out.

Delicious spinach fettuccine with the fragrant herbed chicken in a creamy – but without the cream! – spinach sauce. I added a little fresh grated parmesan for added flavor. Will use tihs again, it was quite delicious and not guilt-inducing in the least. 2 months ago


LaNouvelleHeloiseHealthy version of laarb

Laarb is one of my favourite Thai dishes. It is usually made with ground pork and has a tangy sweetness.

I have modified it significantly to make it healthier – I use ground chicken instead of pork, no salt, no fish/soy sauce and no sugar. It is quick and easy – just cook the chicken, add ginger and chilli paste and ground peppers, then add the lime juice and let cook 2 minutes on a very low heat. Once the pan is off the heat, I add the raw ingredients – red and green onions, fresh ginger, cilantro, thai basil, peanuts, red chilli peppers.

It was pretty delicious served with raw baby spinach. I will have it for lunch tomorrow with whole wheat spaghetti. I know that Tuesday I am eating out a lot – work events – so it’s nice to have this light dish on the days leading up to Tuesday. 2 months ago

I’ve been limiting starches to twice a day, in small quantities, eating lots of raw veggies, lean protein, limiting salt, cooking with lime juice, eating small portions of fruit and choosing herbal tea at night instead of my favourite black teas.

BUT…I succumbed to the temptations of ice-cream at an emotional moment. This is my weakness: eating to feel better. 3 months ago
