How to be a vegetarian and stay that way
How I did it: After I finished high school, I knew that a lot of things in my life were going to change. I had thought about being vegetarian for ages, so without really thinking about it, I just took the plunge. I read part of Becoming Vegetarian by Vesanto Melina and Brenda Davis. I added some fake meats to my diet, as well as things like nuts, and I began to cook a lot more.

Fish/seafood, chicken, pork, red meat. Well, that is if you’re an Ovo-Lacto veg, as I am. I don’t eat nothin’ with a nervous system (useta say “nothing with a face” - but then I had to come up with an embarrassingly circuitous rationalization for eating eggs…y’know, ‘cause eggs would eventually be chickens if I left them alone - “and you don’t eat CHICKENS, do you?” says the smug accuser. It also explains why I don’t eat shellfish.)
Anyway, as I was saying, becoming a vegetarian means you’re only giving up four ingredients. A good fettucine does not require sausage. Soups do not require a beef base. Eggs do not require ham, nor do beans. And as for throwing chicken on a perfectly good salad, I mean really...
There are a LOT of deelish things to eat out there and only four of ‘em are meat. If you’re becoming a vegetarian because you just don’t wanna eat animals, you won’t miss any of ‘em.
Meat’s no treat for those you eat!
