A very satisfying activity for a public holiday!

.... I have spent the morning making my first batch for the year.
A dozen jars later, and this is only the beginning!
... as promised…. metric measurements
1 kg zucchini (or cucumber)
4 onions
2 red and 2 green capsicums
1/2 cup cooking salt
2 1/2 cups white vinegar
2 cups sugar
1 tsp mustard powder
1 tsp nutmeg
1 tsp curry powder
2 tbsp corn flour
1 tsp celery salt
1/2 tsp black pepper
Mince zucchini, onions and capsicums roughly in food processor.
Sprinkle with 1/2 cup salt and leave overnight.
Next morning, drain and rinse well. Add remaining ingredients.
Bring to boil and simmer slowly for 15 minutes
Pour into hot sterilised jars and seal…...
