I’ve always wanted to own a diner in the middle of nowhere. Like, seriously nowhere. Not just an obscure town, but along a hundred mile stretch of road where my diner is the only thing along it.
There is a small place in a nearby town that used to be a diner and has been closed down – I think due to owner retirement. I would love to open a diner that would serve breakfast and lunch. This town has a university just one block away and I remember the old place always being busy.
There’s nothing quite a like a good diner breakfast: crispy bacon, good coffee, home fries done right, fluffy pancakes, eggs to order. I’d love to own the kind of diner I’d love to go to. I don’t actually want to cook. I just want to oversee things, greet people, make sure everyone’s coffee is topped off—and, of course, rake in the money.
Mickey’s Dairy Bar in Madison, WI and the Sunny Day Diner in Lincoln, NH would be my inspirations.
