Michigan is not known as the sunshine state. Even so, Mib7 and I have enjoyed MANY good solar cooked meals this year. I suppose my favorite dish is jalapeno cornbread made with our home grown peppers and Jiffy=mix cornbread. (On a side note, I LOVE Jiffy mixes! I’m tempted to set up a fan site for them!) Jiffy mix brownies in the solar oven are also pretty yummy too. Potatoes and onions are a staple, hard to screw up and quite tasty. Rice too.

It’s only May 12 and so far I’ve solar cooked more foods this year than I did all last summer. I’ve made, more or less successfully, rice, potatoes, 3 kinds of cakes, spinach bake, eggs, and chicken. I’ve been documenting my recipes and outcomes over at the gardening website Jimbo and I have been working on. Check out the 20minutegarden.

When the morning light was streaming in, Jimbo suggested we get something started in the solar oven he assembled in January.
Into our small stackable quart-size pots I put: 3 chicken thighs with salsa, 1 cup of rice divided between the 2 bottom portions, and a couple handfuls of fresh green beans.
About 7 hours later, we sat down to a completely delicious, totally solar-cooked meal. It was so good! We’ve learned the trick to good rice—starting with hot tap water. The chicken was falling-off-the-bone scrumptious. The green beans were delicious, but a not-lovely color; I think they may have been overdone. All in all, an early summer triumph!
